Amablu Blue Velvet Soup

  • 8oz. Amablu blue cheese crumbles
  • 1 cup each finely chopped carrotts and celery
  • 1/2 cup minced onion
  • 2 tablespoons butter
  • 1 tablspoon flour
  • 1 cup milk
  • 8 oz package of cream cheese
  • 13 1/2 oz can chicken broth
  • 1 tablespoon chopped parsley

In medium sauce pan saute the onion, celery and carrots in in butter until tender. Blend in the flour. Gradually blend in the milk and cream cheese until smooth. Add the chicken broth, cheese, and parsley. Heat and serve hot. This is a very rich and delicious soup.
