The Cheese Cave Factory Store

We opened our doors as a retail Artisan Cheese Shop in June of 2009. Since that opening we have been embraced by our community and have grown into so much more than your everyday Cheese Shop.

CheeseYes, we carry over 40 beautiful Artisan cheeses from all over the World, but we also carry everything that one could imagine going "with" cheese: a sizeable array of remarkable crackers and cookies, spreads, jams & jellies, imported pastas and sauces, superb oils & vinegars, olives & peppers, pie & tart fillings, spices & extracts and so much more!

We have a full bar where we perform wine & cheese pairings and serve light lunches. We make our own cheese curds fresh every week right here in the store while our customers watch. Yes, we are so much more than a Gourmet Artisan Cheese Shop!

Delicious Soups, Salads and Sandwiches Served Daily

Our salads made-fresh-daily include Craisin or Raspberry Pecan with St. Pete's Select Blue Cheese, Blueberry with Eichten's Smoked Gouda, Greek Salad with salty fresh Feta and Mandarin Orange with shredded White Cranberry Cheddar.

SandwichesOur made-fresh-daily sandwiches include succulent Roast Beef with Amablu Gorgonzola or juicy Turkey with Fini Cheddar served on fresh baked herbed focaccia bread as well as sweet Ham with Prairie Rose Swiss on fresh baked ciabatta bread.

We have two unique pizzas on our menu that are sure to delight your palate! Caprese' Pizza uses fresh basil pesto in place of tomato sauce, fresh mozzarella and fresh tomatoes. We drizzle it with 12-year old balsamic at the finish. The Roasted Red Pepper Pizza utilizes ground roasted red peppers in place of tomato sauce, fresh mozzarella and crispy shallots. We sprinkle fresh grated imported parmesan reggiano to finish!

We make fresh homemade soup every week from scratch throughout the Fall and Winter! Some selections are Cheesy Broccoli, Roasted Potato & Leek, Cheesy Cream of Mushroom and Cheddar Corn Chowder. Spring and Summer will bring fresh fruit and cheese sampler plates as well as a new fresh fruit salad every week to take advantage of the Seasonal bounty.

Cheese Trays

We can provide you with stunning Cheese Trays for your entertaining needs. We have several standard trays but can also provide custom trays to you as well. Tell us your budget, the number of guests you expect, choose your own cheeses. . . .we will create cheese platters to "wow" your guests! We include Colombian chocolates, fresh fruits, candied nuts and crackers all arranged beautifully.

We are the "factory outlet" store for The Caves of Faribault - the producer of internationally award winning St. Pete's Select Blue Cheese and Amablu Gorgonzola. The factory, with its natural sandstone caves, was the first cheese cave in the United States! Its natural sandstone was hand-carved into caves and provides the perfect environment for making prized, high-quality cheese. The natural sandstone absorbs and retains all the elements of the events within it - we say the walls have a "memory". At one time the caves housed a brewery and those elements have been retained and are passed on to our cheeses that are aged there to this day.
